Pina Colada Ice cream

If Pina colada is your guilty pleasure then without any doubts you are sure to love this Pina colada ice cream.


It’s so good, I can confirm without regrets that myself and my household have had this way too many times as we would ideally love to admit but hey it’s just a treat.


This recipe is easily put together with few ingredients. The only issue you may encounter will be your waiting time with the freezer due to anxiously waitig to dig in.

Ingredients

  1. 397g Sweetened condensed Milk ( 1 can)
  2. 300ml Heavy cream
  3. 1 cup pineapple ( you can use fresh or frozen )
  4. 1/2 cup coconut cream.
  5. 1/3 cup Desiccated Coconut
  6. 2 tablespoons white rum ( You can skip the alcohol )

To make

  1. In a bowl Whip the double creamMilk until it takes a stiff form using a hand mixer or a whisk.
  2. Add coconut cream and condensed Milk and gently fold In.
  3. Purée pineapple , strain to remove the extra bits.
  4. Pour this in the mix then combine all together
  5. Lastly add the desiccated coconut and rum, mix together until it’s perfectly combined .
  6. Freeze for 2-3 hours or overnight.

Ingredients

  • 380 g Sweetened condensed Milk
  • 1/2 Cup Coconut Milk
  • 1/3 Cup Fresh cubed Pineapple Frozen is just as good.
  • 1/3 cup Desiccated Coconut
  • 3 Tbsp white rum

Instructions

  • In a Mixing bowl Whip the heavy cream until it takes a stiff form using a hand mixer or a whisk.
  • Add coconut cream and condensed Milk and gently fold In.
  • Purée pineapple , strain to remove the extra bits.
  • Pour this in the mix then combine all together
  • Lastly add the desiccated coconut and rum, mix together until it’s perfectly combined .
  • Freeze for 4 hours or overnight.

Notes

  1. This recipe is not restricted to only fresh Pineapple, frozen pineapple will be just as good.
  2. skip adding rum to this ice cream for children or according to preference.
  3. Reduce the desiccated coconut if you can’t tolerate coconut.
