One Pot Rice Dish. Easy chicken and rice Meal.

This easy One pot Rice dish is the ultimate comfort food.  Delicious, easy to make , a winner as it’s also easy on the pocket, for me this is an perfect combination. This dish is bursting with flavours guaranteed to put give full satisfaction.  

I specifically love one pot meals because of how convenient they are to make. For this recipe all I did was marinade the chicken overnight then made a quick sauce, mixed all together then cooked in the oven for 40 Mins while I caught up with my favourite show on TV.

Another reason why I love this One pot rice dish is the flavours. It really is so delicious but sadly I cannot guarantee you will only have two plates servings, it really might be three or maybe 4 but I will leave this battle to you. 

For the most flavour, cook chicken on top of the rice so it can gently release all its yummy juices into the rice. 

You can reduce the heat of the dish by removing the scotch bonnet or increase by adding more, also remember you can always reduce the seasoning to suit your taste depending on how spicy you like your food.

Tips for Making The best one pot Rice Dish

  1. Use fresh ingredients as much as possible 
  2. Ensure you season properly.
  3. Use good rice like Basmati or long grain (I Used Basmati rice for this)
  4. Another tip is to make a big batch of the sauce, simply freeze this and use whenever you want to make this dish, this will save you some cooking time and it’s an excellent option.

How To Keep Rice After Cooking

  1. you can totally freeze this rice and pre heat in the oven or Microwave
  2. Store leftover if you want to eat withing the week in an airtight bowl in the fridge and simply microwave when you want to eat.

Can I Swap The Chicken ?

 Yes you can very much swap the chicken, a good alternative will be beef or Lamb but you can totally swap this for whatever you prefer. 

Must I cook this One pot Rice dish in the oven?

No you must not , this can also be done on a stove top , simply cook using the same method as you would in the oven but cooking time should be shorter but result should be pretty much the same.

Ingredients Used

  • 4 chicken thighs 
  • 3 cups of Rice 
  • 1 scotch bonnet 
  • 2 Red Bell peppers 
  • 1 sweet long Red pepper 
  • 1 tsp tomato puree
  • 1/2 Cooking spoon of oil 
  • 2 red onions 
  • 1 tsp thyme/ dried rosemary
  • Bay leaf 
  • Red chopped chilli paste 
  • 1 Small ripe tomato
  • Chicken seasoning 
  • 1 tsp salt
  • Garlic powder 
  • ¼ tsp of oregano 
  • Black pepper
  • 1 tsp curry powder 
  • Caramelised onions (Optional)

How To Make one Pot Rice Dish

  1. To marinade your chicken, season with oregano, salt, garlic powder, 1 tsp chicken seasoning, dried rosemary, black pepper, curry powder and caramelised onion if you have this and allow to sit in the fridge for 2 hours or overnight.
  2. Blend peppers and onion using a food processor, you don’t want to over work this, ideally two pumps should be fine as we don’t want a smooth consistency.
  3. Heat up a cast iron skillet and add your chicken with the skin down to give it some nice colour, cook this until chicken turns brown, the aim is not to fully cook at this point but just to add some colour.
  4. Using the same pan from the chicken, add cooking oil and allow to heat up for some seconds then pour in blended peppers and tomato puree, allow to fry for 5 min.
  5. Add salt, chicken season, a pinch of curry powder and bay leaf to the mix and cook for one more min.
  6. Pour 3 cups of water and add washed rice, mix thoroughly together.
  7. Transfer to an oven dish or using same cast iron, add chicken on top and pour all the resting juice also.
  8. Cover with foil and use a fork to create small holes to allow some heat to penetrate. Cook in the oven for 40 mins using the Fan or until fully cooked.
  9. Remove from the oven and mix all together using a fork or wooden spoon, Serve and enjoy with a side of Salad or on its own.

Notes

  1. You can use chicken stock or brought instead of water if you have some and then reduce the salt and seasoning for the sauce.
  2. Remember this recipe can totally be customised to suit your taste for example red onions for white onions, Garlic powder for onion powder etc.
