How to make the best Nigerian Salad.

After you try this classic Nigerian salad you will never want to have your salad any other way. It is Creamy, sweet, crunchy flavourful , irresistible and so easy to make. 

Growing up I looked forward to when my mum would make this for us, it is a Family favourite. It takes a few minutes to prep and prepare but totally worth it. This is one of those salad recipe you just have to prepare yourself because you are unsure if the next household will nail it for you.

I love the crunch and sweetness that comes from every bite of this sweet salad recipe. Every spoonful is a promise to satisfy your taste bud. This salad goes well with Jollof rice, spicy rice , grilled chicken, fried chicken, shrimps or Salmon. 

Ingredients

  1. Cabbage (White and Red)
  2. Carrots
  3. Cucumber 
  4. Baked Beans
  5. Pomegranate (Optional)
  6. 4 Hard boiled Eggs
  7. Macaroni 
  8. Mixed dried Berries
  9. Sugar 
  10. Mayonnaise
  11. Salad Cream 

How to make Nigerian Salad

  1. Wash your Vegetables
  2. Boil macaroni with 1 Spoon of Sugar, once cooked drain and leave to cool.
  3. Using a potato peeler, scrape your Carrots to reveal a beautiful smooth skin. Once this is done you need to grate your carrots with a grater then set aside.
  4. Cut your cabbage into thin strips using a knife or a food processor with a slicer
  5. Peel the skin of the cucumber using the peeler, now cut into two, using a spoon scoop out the seeds then cut into small cubes and set aside.
  6. Drain Baked beans to remove excess juice. 
  7. Assemble Salad in a large dish, combine cabbage, macaroni, carrots, chopped eggs, and mixed berries together.
  8. Mix mayonnaise and Salad Cream then pour into salad then combine thoroughly.
  9. Garnish Salad with pomegranate if you decide to use it .
  10. Your salad is ready to eat at this point but allow it to sit in the fridge for at least 30 Mins to 1 hour so all the vegetables can absorb the dressing and sweetness from the macaroni. Enjoy with your favourite side dish or just on its own.

Tips For Making This Salad

  1. Use fresh vegetables.
  2. Wash your Cabbage thoroughly, you don’t want to taste sand or any form of dirt in your salad.
  3. To get that thin slice with your knife, first cut your cabbage in half then start cutting thinly across the stem from the bottom. 
  4. Ensure your eggs are cooked completely.

How To Store Your Nigerian Salad

Now to store your Salad, keep in an airtight bowl in the fridge, for up to 4 days. Growing up we kept this in a small tray and covered with kitchen foil, it’s just how I grew up and especially because it never lasted more than one day.

Must I Use Red Cabbage

Absolutely not, the original recipe is made with white cabbage but I love the colours that comes with using red cabbage that’s why I added to this recipe.

Can I Change The Salad Dressing

No, the mixture of Mayonnaise and Salad Cream is to allow it to stand out uniquely. It just works.

Recipe Variation for This Salad

  1. You can omit the Macaroni and add your sugar to the Mayonnaise and Salad cream dressing before pouring in your salad.
  2. If you want to eliminate the sugar completely simply add some raisons, the dressing will help release some sweetness from it.
  3. Also you can add corn beef to the salad and, this is equally lovely. 
  4. Lastly you can totally make this without the baked beans if you can’t tolerate beans. 

What Is The Best Side Dish For this Nigerian Salad

Ah this Salad can be eaten on its own, I actually do prefer it this way but you definitely should try it with the blow.
