I enjoy making this easy baked mac and cheese with breadcrumbs and it is one of my ultimate comfort food, the bacon adds a bit of naughty smokiness to the dish and the breadcrumbs adds some crunchiness which I love.  Off course you can totally make this mac and cheese without the bacon if you like and that’s absolutely fine.

There and few simply steps to making this easy baked mac and cheese , the first is to precook your pasta and then making your  white sauce starting with a roux ( a roux is a flour and butter sauce used as a base for mac and cheese or a s thickener ) then adding your cheese/toppings before baking. You can easily customise this recipe, you can take out the bacon or breadcrumbs and you can also use the cheese of your choice but for this recipe I used Cheddar cheese and red leister cheese to add some colour.

Mac and cheese can be eaten on its own or as a side dish, but it is a dish that has to be present for that family dinner or thanksgiving dinner.  You can also divide the ingredients listed below to make it for a special dinner for two or double the recipe for a bigger party.

Ingredients for our easy baked Mac and cheese with breadcrumbs

  • 4 cups Maccaroni
  • 200g Mozerrela 
  • 200g cheddar cheese
  • 2 tbsp Parmesan cheese 
  • 150 red leister cheese 
  • ½ litre milk or 180oz milk 
  • 60g Butter 
  • 1 cup double cream 
  • 2 tbsp Flour 
  • White pepper 
  • Adobo seasoning ( just a tiny bit )
  • Black pepper 
  • Salt to taste
  • 4 dried Bacon strips
  • ¼ cups Bread Crumbs 

Method

  • For the Macaroni, cook in salted water 3 mins less than the cooking time on the pack. 
  • Once cooked , strain and then set aside 
  • Cook the bacon until it’s crispy. You can use already dried bacon if you have.
  • Dice your Bacon stripes into smaller bits, mix with 2 tbsp. melted butter and breadcrumbs then set aside.
  • In the saucepan add butter and allow to melt, keep an eye on this process so the butter does not burn. Now gently whisk your flour into the mix, make sure you whisk continuously to avoid any lump. 
  • Now add your milk to the batter and continue whisking, after 2 mins it should form a smooth thick consistency. Once the sauce thickens now add your full cream and continue whisking after 2 mins add your cheese in batches and keep whisking, remember we don’t want any lump.
  • Now add black pepper, adobo seasoning, I don’t add salt to my mix because the macaroni already has salt and there is salt from the cheese.
  • Add the precooked Macaroni into the cheesy sauce mix and stir it all together, ensure every piece is coated. 
  • Pour into an oven proof dish, add addition cheese and mix then top it up with more cheese.

Tips for making this easy baked mac and cheese with bread crumbs 

  • Cheese: For the best result I highly recommend buying your cheese in blocks and then grating this yourself.  You can use a Food processor to grate your cheese or simply use a hand grater which is what I mostly use as I find it therapeutically. 
  • Cooking the Pasta: Do not overcook your pasta, always cook your pasta 3 mins less than the actual recommended cooking time on the packet. Also do not over salt your pasta as there is already salt in the cheese and you don’t want to overpower those flavours.
  • Roux:  Now When making the Roux , ensure you whisk this slowly and continuously to avoid lumps , add your cheese in small batches and whisk all through the cooking process

How to Store 

Keep in an airtight container and refrigerate, this can stay up to 4 days, simply pre heat when you want to eat 

You can also freeze this mac and cheese, I would advise you freeze after assembly so you bake it fresh when you want to eat but you can also freeze this after baking and use the same baking process before serving 

Other variations to this Mac and cheese recipe

  • You can make this mac and cheese without the breadcrumbs and bacon or use just the breadcrumbs and no bacon, but ensure to mix with melted butter.
  • Chicken or Lobster, you can also swap the bacon for some chicken tenders or if you want to go fancy add some lobster.
